Anti-inflammatory: Quinoa Salad Bowl
Finding anti-inflammatory recipes that leave you feeling full are like searching for a needle in a haystack. One of my favorite lunch go-to’s is super easy to make with leftovers in your fridge!
Quinoa Salad Bowl
- 1/2 cup cooked quinoa
- 1 cup spinach
- Chopped veggies
- 1/4 cup cubed cooked chicken
- Olive oil
- Quinoa can be prepared ahead of time or day of.
- Mix chopped veggies of choice (avoid tomato if nightshade sensitive), spinach, cubed chicken, and quinoa.
- Top with olive oil.
